i AM NOT SURE HOW THE PROS DO IT- BUT I START out using sushi rice. and buy those packages of seaweed they sell in stores.you want to have a lemonput the lemon juice on the sushi to moisten it enough to roll, but not too moist or it will fall apart. whatever you want to put in the middle,is fine, be that raw fish or veggies. you need to cut the veggies up really slender and in long skinny pieces.I always use carrot, cucumber,celery, sometimes i even spread creamcheese on the sushi rice after it has been spread on the piece of sushi, then put the veggies in and roll it up. You need one of those sushi rollers. i have done it by hand but it is harder to make them look pretty.at that point you can lay them out and cut them into the sized pieces that want.you can roll them in sesamie seeds.
